Apple Cinnamon Muffins

This is another recipe from Margaret M.- my sister's mother-in- law.
These are quick and easy to make.
These were Margaret's favorite muffin and she would bring them often to any family gathering.

1 1/4 c
all purpose flour
1 1/2 tsp
baking powder
1 tsp
1/2 tsp
1/2 tsp
baking soda
1 pinch
of salt
2 Tbsp
brown sugar or stevia brown sugar
1 c
unsweetened applesauce
1 large
egg, slightly beaten
1/2 c
low fat milk
1 Tbsp
vegetable oil
1/3 c
3 Tbsp
minced almonds or other nuts
1 tablespoon stevia sugar and 1/2 teaspoon cinnamon to sprinkle on top , if desired

Directions Step-By-Step

Combine the dry ingredients. (first 7 ingredients)
Combine the wet ingredients in a bowl.
Add the dry and wet together just until moistened.
Spray muffin tins with vegetable oil and divide the batter evenly among the cups.
Top with the cinnamon/sugar mix , if desired.
Bake at 400^ for 15-20 minutes.
128 calories/ 2.5 grams fat per muffin.
