Apple Cinnamon Muffins
These are quick and easy to make.
These were Margaret's favorite muffin and she would bring them often to any family gathering.

- 1 1/4 c
- all purpose flour
- 1 1/2 tsp
- baking powder
- 1 tsp
- 1/2 tsp
- 1/2 tsp
- baking soda
- 1 pinch
- of salt
- 2 Tbsp
- brown sugar or stevia brown sugar
- 1 c
- unsweetened applesauce
- 1 large
- egg, slightly beaten
- 1/2 c
- low fat milk
- 1 Tbsp
- vegetable oil
- 1/3 c
- 3 Tbsp
- minced almonds or other nuts
- 1 tablespoon stevia sugar and 1/2 teaspoon cinnamon to sprinkle on top , if desired
1Combine the dry ingredients. (first 7 ingredients)
Combine the wet ingredients in a bowl.
Add the dry and wet together just until moistened.
Spray muffin tins with vegetable oil and divide the batter evenly among the cups.
Top with the cinnamon/sugar mix , if desired.
Bake at 400^ for 15-20 minutes.
128 calories/ 2.5 grams fat per muffin.
