Millie's Easy White/Wheat Bread (bread machine)

This has become my family's favorite bread recipe. My bread machine was messing up and burning everything, except on the one hour setting. This was a challenge as most wheat breads must be kneaded and risen longer than your normal white bread that uses the one hour setting. This was what I came up with and we love it. I like the combination of molasses and cocoa in this recipe. I hope you will, too !

Bread Machine


2 1/2 c
unbleached white bread flour
1/2 c
unbleached wheat flour
1 - 1 1/2 c
warm water (115-120 degrees) , plus 2 tablespoons
1 tsp
cocoa powder
1 Tbsp
1 Tbsp
1 tsp
sea salt
1 - 1 1/2 Tbsp
active dry yeast * i use fleischman's bread machine yeast, or rapid rise yeast.

melted butter


Step 1 Direction Photo

1Pour white flour into a large bowl, then scoop flour with a big spoon into the measuring cup (so flour will not be compressed) and level out flour by running the flat side of a knife across the top of the measuring cup. Put measured flour into a slightly smaller bowl.

2Now add the salt, sugar and cocoa to flour and stir to combine. Do NOT add yeast yet.

3In small pot, melt butter then add the water to the pot and heat to 120 *F.

4Add molasses to pot and stir to mix it into water. Now pour this into the bread machine reservoir.

5Spoon flour mix into reservoir then use spoon to make a shallow hole in the middle. Do not go through to liquid. Pour the yeast into this hole. Put into bread machine and run it on the one hour bread cycle.(#5 setting on mine)

6* You may need to add a tad more water if mix is too dry. Just add a teaspoon at a time and scrap the sides down with rubber spatula.

7When bread machine is finished, turn loaf out cool on a rack. Do not wrap or bag till it is cooled completely.

8Sometimes I also add 1/4 tsp. garlic powder and onion powder to the dry ingredients. Very good for sandwiches !
