Ingredients

1 c
white sugar
3/4 c
cup canola oil
2
eggs
1 c
buttermilk
1 tsp
orange zest
2 1/2 c
all purpose flour
1 tsp
cinnamon
1 1/2 c
dried cranberries
1 c
diamond of california@ pistachios
pinch of salt

Step-By-Step

1Preheat oven to 350 degrees F
Liberally grease a 9" loaf pan with cooking spray and set aside.

2Meanwhile, in a large bowl, whisk together the surgar, oil, eggs and buttermilk. Add in the flour, baking soda, salt, and cinnamon until combined. Lastly, fold in the cranberries, orange zest and pistachios.

3Pour the mixture into the prepared pan and spread in an even layer. Bake for appox. 50-60 minutes or until a toothpick inserted near the center comes out clean or with moist crumbs.
Cool completely before cutting or serving. Feel free to glaze if you'd like, but is not needed.
I have glazed using cranberry juice w/ conf. sugar.
