quick blueberry muffin

I used these as a snack for my sons and their friends when they were in school. Then when we were able to have cooked treats for Halloween these worked great also.

Ingredients For quick blueberry muffin

  • 1-3/4 c
    flour
  • 1/3 c
    sugar
  • 2-1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 c
    fresh or thawed blueberries
  • 3/4 c
    milk
  • 1
    egg, beaten
  • 1/3 c
    butter, melted

How To Make quick blueberry muffin

    Preheat oven to 400 degrees
  • 2
    Lightly spray muffin pan with cooking spray or line with paper baking cups (like for cupcakes).

    In a large bowl combine flour, sugar, baking powder, and salt. Add blueberries to flour mixture. Add milk, egg, and melted butter, to the dry mixture and mix until this becomes lumpy. DONOT OVER BEAT.

    Divide batter evenly between the muffin cups. Bake 20 to 25 minutes or until tops spring back when lightly touched. Remove from pan when cooled for 5 minutes and then cool completely. these taste better warm with butter melting on them.
