I modified this to a Plan-Based recipe by replacing the olive oil in the original recipe with vegetable broth. Still tastes great!!

Ingredients

1 can(s)
white shoepeg corn
1 can(s)
black-eyed peas
1 can(s)
black beans
4 oz
chopped pimento
4 oz
chopped jalapeƱo or mild green chiles
1 c
diced celery
1
red onion, diced
1 c
vegetable broth
1/2 c
apple cider vinegar
salt and pepper to taste

Step-By-Step

1Drain & rinse canned vegetables
2Mix with rest of vegetables
3Mix vegetable broth and vinegar. Pour over vegetables. Stir well.
4Mix well & marinate overnight
5Drain marinade & serve with scoopable chips
