Ingredients

2 large
(10-inch) flour or whole wheat tortillas
2 Tbsp
nonfat plain yogurt
1 - 10oz. pkg
frozen chopped spinach, thawed and squeezed dry
1 large
tomato, chopped
1/2 c
shredded reduced fat mexican-blend cheese
1/4 c
chopped green onions

Directions

PREHEAT: Oven to 450 degrees F.
COAT: Baking sheet with nonstick cooking spray.

PLACE: Tortillas on baking sheet.
BAKE: 2 minutes, or until golden brown.
REMOVE: From oven and reduce oven temperature to 350 degrees F.

SPREAD: Yogurt evenly over tortillas.
TOP: With spinach and tomato and sprinkle with cheese.

RETURN: To oven 5 minutes more or until cheese is melted.
SPRINKLE: With green onions.
CUT: Each tortilla into 6 slices.
SERVE & ENJOY!
