Green Tomato Salsa

When the weather turned I harvested my tomatoes and made this recipe. I found it on I added some seasonings.

green tomatoes
8 oz
ripe red tomatoes
1 c
fresh corn kernels (or frozen)
1/4 c
chop fresh chives - or 1/8 cup of fresh cilantro
2 Tbsp
fresh lemon juice
1/2 tsp
salt (or to taste)
1/8 tsp
coarsely ground pepper (or to taste)
taco seasoning mix (or to taste)

Directions Step-By-Step

Chop the red and green tomatoes. Chop the chives.
In medium bowl, gently stir tomatoes with corn, chives, lemon juice, taco seasonings, salt and pepper. Cover and refrigerate at least 1 hour to blend flavors, or up to 8 hours. Drain before serving if chilled longer than 1 hour.
