These are so good and so easy. You may want to add just a touch of green food coloring to dress them up, but it is not absolutely necessary.

Ingredients

2 lb
small zucchini
2
small onions
1/4 c
table salt
2 c
white vinegar
2 1/4 c
white sugar
1 tsp
celery seed
1 tsp
turmeric
2 tsp
mustard seed
green food coloring

Step-By-Step

1Wash and slice the zucchini pretty thin.
2Peel and slice the onion thin.
3Toss zucchini and onion together.
4Cover the zucchini and onion slices with the water and salt.
5Let stand for two hours.
6Drain thoroughly.
7Bring the vinegar, sugar, celery seed, turmeric and mustard seed to a good boil.
8Add green food coloring, if desired.
9Let stand two more hours.
10Bring the entire mixture to a boil, and boil for five minutes.
11Pack in hot sterilized jars and seal.
