Beet and Carrot Ceviche

I had some left over beets, so why not!

Ingredients

2 large
beets
2 c
carrot, shredded
2 large
limes, juiced
2 Tbsp
cilantro, fresh, minced
2 clove
garlic, minced
1/2 tsp
cayenne pepper

Step-By-Step

1Rinse the beets and cut them into small straws.
2Mix the prepared beets with the lime, herbs, cayenne pepper and garlic.
3Let it sit for about 15 minutes and add more lime and cayenne to taste (the beets soak it up).
4Add the carrots toward the end so they stay orange.
