Quick Pickled Peaches

These are great served with grilled chicken or pork. Also yummy on top of pound cake. Look for peaches that are still firm....they will soften as they pickle. Using over ripe peaches means they will be mushy. Can also be served on a summer appetizer tray.

Ingredients

1 1/2 c
cider vinegar
1 1/2 c
water
1 c
sugar
1 Tbsp
kosher salt
1 Tbsp
crushed red pepper
2 tsp
whole black peppercorns

2-inch cinnamon stick, broken into small pieces
4 large
fresh peaches, slightly firm, peeled

Directions Step-By-Step

Combine the first 8 ingredients in a large saucepan; bring to a boil. Cook for 2 minutes, stirring until the sugar dissolves.

Remove from the heat and let stand for 10 minutes.

Cut each peach into 12 wedges. Add the peaches to the vinegar mixture; let stand 20 minutes. Remove the peaches with a slotted spoon.
