This is a further modification of the famous Elvis Presley's sandwich. To me, lumpia wrappers from the frozen section work better. they're thin and crispy, even if they're baked. I also think these rolls taste better while still warm

Ingredients

3/4 c
creamy peanut butter
1 tsp
ground ginger
1/4 tsp
cayenne pepper
2 Tbsp
honey
3 medium
bananas
12
egg roll wrappers
cooking spray

Directions Step-By-Step

Preheat oven to 425°F

Combine peanut butter, ginger, cayenne and honey in a small bowl. Halve bananas lengthwise, then crosswise. Spread 1 tablespoon peanut butter mixture near bottom corner of a wrapper, top with a piece of banana. Bring bottom corner up and fold sides towards the center, roll up. Moisten final top corner with water; seal. Repeat with remaining ingredients

Spray rolls with cooking spray; place seam side down on a baking sheet. Bake for 12 to 15 minutes, turning halfway through, or until golden brown

Loved the recipe, I used the egg roll wrappers. The Lumpia are just the spring roll wrappers and may be a little thinner but they are hard to get here so I would have to order them from Amazon so the egg rolls are just fine. I used quite a few different ingredients and loved them all! Thank you so much for sharing. I always tweak recipes to suit my taste and this was a great recipe for that!It is BLUE RIBBON worthy to me.

I was wondering about the pepper as I have IBS and have to be careful with the spices. I guess you could say if it can be left out, I will, but don't usually adjust or change anything until I have tried it the original way first. We both love bananas so will be making these. Thanks for all the great ideas.

Thank you so much for sharing! My newest prego-craving is peanut butter. Ive never been able to find lumpia wrappers where I live but wonton wrappers seem to work pretty well. I'll give it a try with those first before breaking out other options.
Has anyone tried freezing these yet? Before or after baking them? I know freezers have a tendency to break down bananas really fast, but maybe with the protective wrapper, sauce, and heat they will stay together for reheating.
