Thaw cream cheese to room temperature for easy mixing.
Chop 5 to 6 individual green onion stems. Add only a small portion of the onion itself.
Chop half of the jar of dried beef.
Add everything together and mold into ball. Wet hands slightly to smooth ball for presentation. Serve with a sturdy cracker-nothing that will crumble easily.
This recipe is very easy to double. I've made it with three blocks of cream cheese for larger parties.
