This batter makes a uniquely delicious onion ring. I promise you will not be disappointed! I usually use beer in my batter but had a bottle of sparkling wine and the rest is history....

Ingredients For onion rings fried in a sparkling wine batter

  • peanut oil for frying
  • 2 c
    flour
  • 2 1/4 c
    prosecco or other sparkling type wine
  • salt and freshly ground black pepper
  • 3 lg
    vidalia or other sweet onions, peeled

How To Make onion rings fried in a sparkling wine batter

    Slice peeled onions into 1" thick rounds and then separate into rings. Pour oil into a wide deep pot to a depth of 2". Heat over medium high heat until temperature reaches 365 D on a thermometer.

    While oil is heating up, whisk together the flour and sparkling wine in large bowl until the batter is smooth. Season to taste with salt and pepper.

    working in small batches, coat onion rings in batter and then use a fork to transfer rings, one @ a time, into hot oil. Deep fry rings, turning often, until crisp and golden; about 2 - 3 minutes per batch.

    Once crisp, transfer onion rings, with a slotted spoon, to paper towels to drain. Season to taste with salt. NOTE: I have had the most success absorbing excess oil by placing a brown paper sack on large platter and then topping with paper towels. Be sure to change out paper towels as needed. SERVING NOTE: You can keep the rings warm on parchment lined baking sheet in low temperature oven for up to 15 minutes. HAPPY EATING!
