onion rings fried in a sparkling wine batter
This batter makes a uniquely delicious onion ring. I promise you will not be disappointed! I usually use beer in my batter but had a bottle of sparkling wine and the rest is history....

Ingredients
- - peanut oil for frying
- 2 cups flour
- 2 1/4 cups prosecco or other sparkling type wine
- - salt and freshly ground black pepper
- 3 large vidalia or other sweet onions, peeled
How To Make onion rings fried in a sparkling wine batter

Step 1Slice peeled onions into 1" thick rounds and then separate into rings. Pour oil into a wide deep pot to a depth of 2". Heat over medium high heat until temperature reaches 365 D on a thermometer.

Step 2While oil is heating up, whisk together the flour and sparkling wine in large bowl until the batter is smooth. Season to taste with salt and pepper.

Step 3working in small batches, coat onion rings in batter and then use a fork to transfer rings, one @ a time, into hot oil. Deep fry rings, turning often, until crisp and golden; about 2 - 3 minutes per batch.

Step 4Once crisp, transfer onion rings, with a slotted spoon, to paper towels to drain. Season to taste with salt. NOTE: I have had the most success absorbing excess oil by placing a brown paper sack on large platter and then topping with paper towels. Be sure to change out paper towels as needed. SERVING NOTE: You can keep the rings warm on parchment lined baking sheet in low temperature oven for up to 15 minutes. HAPPY EATING!
