Watermelon Scallop Ceviche

Watermelon adds a fresh and fruity flavor to the classic ceviche. The sweetness of the melon counters perfectly with the fresh scallops and the tangy lime and lemon juices.

watermelon puree (blend watermelon and strain – reserving juice)
1/2 c
fresh lime juice
2 Tbsp
minced parsley
1 Tbsp
fresh lemon juice
1 Tbsp
premium vodka, optional
1 Tbsp
minced fresh chives
kosher salt and freshly ground black pepper, to taste
1 lb
sushi grade fresh sea scallops
rice crackers or crispy flatbreads, for serving

Directions Step-By-Step

Mix together all of the ingredients except the scallops in a glass serving bowl.
Slice the scallops into 1/4-inch thick “coins” and drop into the dressing
Cover and refrigerate for 2 hours, then serve with rice crackers or crispy flatbread.
