Use your food processor for this. Drain the garbanzo beans well,add to the machine with the garlic,lemon juice and zest,salt,pepper. Pulse until all is mixed then turn on regularly and slowly add in the olive oil until the hummus is nice and smooth. You may want to scrape down the sides of the bowl to get all of it.
Remove from the bowl to a serving vessel and garnish with paprika,cayenne,chives or whichever you prefer. Serve with fresh cut raw vegetables,pita chips or you can use this as a spread on sandwiches too! Enjoy!
