Ingredients

10 slice day old white bread, cut in 1 inch cubes
1/4 c unsalted butter, melted
1/2 c golden raisins
1 tsp cinnamon, ground
4 large eggs
3/4 c light brown sugar
1 tsp vanilla extract
1/2 tsp salt
3 c hot milk
1 pinch nutmeg,ground
4 large bananas, peeled and cut into 1/2 inch thick slices

Well if you haven't noticed I like bananas and I love bread pudding. I use more bananas than the recipe calls for. So I do hope you enjoy!!!!!!!!!!!!!!!!!!!I got this recipe from a guide book.

 

Directions

Lightly coat pan with non-stick cooking spray. Preheat oven to 375 degrees. In a large bowl, Combine bread cubes, melted butter, raisins, and cinnamon; Mix well. Beat eggs in a large bowl. Whisk in sugar, vanilla, and salt until sugar is dissolved. Slowly whisk in hot milk. Pour egg mixture over bread cubes and toss gently to coat. Sprinkle with nutmeg and set aside to soak for 5 minutes. Spoon half the bread mixture into pan. Layer sliced bananas on top, followed by remaining bread mixture and any remaining liquid in bowl. Cover and refrigerate at least 1 hour up to overnight. Bake, uncovered for 30 to 45 minutes, until a knife inserted into the center comes out clean. (Bake for 1 hour if refrigerated overnight) Let stand 15 minutes before serving. Use whipped cream if desired. ( Challah, Brioche, French Bread, Croissants or Dinner Rolls work well.}
