1 pkg betty crocker double chocolate chunk cookie mix
3 Tbsp vegetable oil
1 Tbsp water
1 egg
36 round milk chocolate-covered chewy caramels, unwrapped
36 pecan halves

These little cookie cups are very easy to make. I made them for Super Bowl Sunday and they were a big hit.

If you like chocolate and caramel, I'm sure you will like these.

These sweet treats are cute as cupcakes, snackable as cookies and as addictive as candy! Yum....

 

Directions

Heat oven to 375 degrees. Place miniature paper baking cups in each of 36 mini muffin cups.

In large bowl stir cookie mix, oil, water and egg until soft dough forms.

Shape dough into 36 1-1/4 inch balls, place in muffin cups. If dough becomes sticky, dust hands with flour.

Bake 8 - 9 minutes or until edges are set. Immediately press one milk chocolate-covered caramel into center of each cookie cup.

Cool two minutes. Top with pecan halves. Cool completely. Remove from pan with narrow spatula.

These look delicious! Silly question: By round milk chocolate covered chewy caramels, do you mean Rolos? I have some Kraft Caramels (Milk Maid, I think) that I'd like to use up. I'm wondering if I could cut those in half and use them and maybe toss in a chocolate chip or two. lol Either way, I'd like to make these. I'm a caramel lover, pecans are my favorite nut and who doesn't love chocolate? ;-)

Sea Sun, I had the same questions when I saw the recipe. I used Rolos but I think any kind of chocolate covered caramel will work. The benefit I found in the Rolos is that when inverted, they make a nice little tunnel in the cookie when you push it in and it is flat on top for the pecan.

Thank you, Valerie. :-) That's very helpful! I'll have to find them in a bag...I'm not sure that I have seen them that way before. Individually wrapped, I am assuming. I'm very acquainted with the candy isle...you would think I'd know. lol

Sea Sun, I got my Rolos at Publix. I don't know if there is a Publix in Iowa but Kroger also had them. You might also try Walmart or Walgreens.

You are correct, they are individually wrapped. I unwrapped them while the cookies were in the oven so I could put them in right after they finished cooking.

Valerie, I was going to ask about Walgreen's. My husband always knows something is "up" as in...I have an ulterior motive when I ask him if he needs more razors. He automatically knows that I will be perusing the candy isle as soon as I walk past the "As Seen On TV!" items.
I will definitely check it out and do my best not to eat too many while the cookies are baking!
