cornmeal
1 1/4 c
sugar
2 Tbsp
flour

eggs

Directions Step-By-Step

Preheat oven to 350.

Melt butter in microwave.

Mix cornmeal, sugar and flour.

Add eggs and butter. Cream throughly.

Mix in vanilla and vinegar. Pour into pie shell and bake for 45 minutes.

    My mother used to make this very same pie. After her Brown Sugar Pie, it was our favorite. I've not had this version of chess pie since she died over 30 years ago. I will have to make it soon. Thanks for posting.

    I love chess pie! Anybody know where it originated? Back in the western days women cooked with what they had on hand. As mentioned, the ingredients are pretty much staples in the kitchen. One day the husband came home and asked as he came in, "What's for supper"? The wife told him. Then he asked, "What kind of pie is that"? Wife said, "Jest pie". In later years it became known as "Chess Pie"!
    Really, this is the truth! Just a little something I remember reading in one of Louis Lamour's western books.
