If I wanted to make a lemon chess pie, would I just omit the vanilla and replace that with lemon extract or is it a different pie recipe altogether?

I can never say how much I love these pies. Chess, lemon chess, buttermilk, and yes the old vinegar pie. That is unless we are talking chocolate chess or chocolate buttermilk pies..........nummy nummy in the tummy

Ok, I made this pie Saturday and followed the directions exactly, however the pie was still partly gooey in the center; is it supposed to be this way? The picture on the recipe doesn't show any goo, so I'm thinking it wasn't done.

Should the pie pass a toothpick test prior to coming out? Please help.
