black magic cake (best chocolate cake ever!)
When my mother passed away, a close family friend made us two wonderful cakes. One was the Kentucky Apple cake, which was a hit with the big guys. The other was this moist, dense chocolate cake, which was a hit with my three sons and their friends. My twin boys requested this for their birthday with one stipulation - they each wanted their own cake, just for them! Oh, and don't be thrown off by the inclusion of coffee in the recipe. You would never know it's there. Matter of fact, if my boys knew it was in there, they would freak out since they hate coffee!
Blue Ribbon Recipe
This is one of the best chocolate cakes we have ever made! It's a chocolate lover's dream. Simple and straightforward, this is one of those recipes that everyone will love. Coffee enhances the chocolate flavor and buttermilk helps make the cake moist. We don't use margarine often for frosting, but this chocolate one is so good it made a believer out of us. It's perfect on top of the chocolaty cake. Be sure to have plenty of milk on hand.
Ingredients
- 1 3/4 cups all-purpose flour
- 2 cups sugar
- 3/4 cup cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 - eggs
- 1 cup strong black coffee, cooled
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 1 teaspoon real vanilla extract
- CHOCOLATE FROSTING
- 1/2 cup margarine, softened
- 2 ounces melted unsweetened chocolate, cooled
- 3 cups powdered sugar
- 3 tablespoons milk
- 2 teaspoons real vanilla extract

Step 1Combine flour, sugar, cocoa, baking soda, baking powder, and salt in a large mixing bowl or stand mixer.

Step 2Add eggs, coffee, buttermilk, oil, and vanilla. Beat at medium speed for two minutes. The batter will be thin.

Step 3Pour batter into a greased and floured 9x13 pan or two 9 inch cake pans.

Step 4Bake at 350 degrees for 35-40 minutes for a 9x13, or 30-35 minutes for layer pans.

Step 5Combine frosting ingredients and mix with a hand or stand mixer.

Step 6Spread frosting on cooled cake.
