Cherry Chicken Salad

Ingredients

2 1/2 c cooked, cubed chicken breast
2/3 c dried cherries (or cranberries)
1/3 c chopped celery
1/3 c chopped tart apple
1/3 c chopped pecans, toasted
1/2 c mayonnaise
4 tsp buttermilk
1/2 tsp salt
1/8 tsp pepper
7 croissants, split

I got this recipe from my aunt. It's great served on croissants. A little fancier than your standard chicken salad.

In a large bowl, combine the chicken, cherries, celery, apple, and pecans.

In another bowl, combine the mayo, buttermilk, salt and pepper. Add to the chicken mixture and mix well.

Spoon 1/2 cup of chicken salad onto each croissant. (or serve on whatever is your preference)

This sounds a lot like one of the many chicken salad recipes I have. Don't you just love how versatile it can be? I LOVE it with dried fruit and nuts in it. I've got one with curry and grapes I need to get posted. I've got this one saved too. Thanks for posting.
