Jenni's StoryI got this recipe from my aunt. It's great served on croissants. A little fancier than your standard chicken salad.
2 1/2 c
cooked, cubed chicken breast
dried cherries (or cranberries)
chopped tart apple
chopped pecans, toasted
1In a large bowl, combine the chicken, cherries, celery, apple, and pecans.
2In another bowl, combine the mayo, buttermilk, salt and pepper. Add to the chicken mixture and mix well.
3Spoon 1/2 cup of chicken salad onto each croissant. (or serve on whatever is your preference)
