8 thickly cut boneless porkchops

3 Tbsp unsalted butter

1 lg shallot or small onion, finely chopped
1 tsp sugar
1 12 oz pkg of frozen cherries
1/2 c balsamic vinegar

Helene's Notes:
Got the idea for this from a similar recipe for roast pork. My family was surprised at the delicioius taste of the cherries! Looks so much more difficult than it is, and is very nice for a dinner party.
 
 

Directions

drizzle pork chops with olive oil, sprinkle with salt, pepper, and sage.

grill pork chops on grill for 10 minutes on each side, until throroughly cooked

on stove, sautee onions in butter. when onions begin to boil add sugar. continue cooking on low heat until carmalized.

add cherries and vinegar to onions and increase heat. bring to a boil, reduce heat again and simmer for 3 to 5 minutes

serve pork chops with a spoonful of reduction over each.

Hubby and I discussed using fresh cherries, he was not thrilled with the frozen ones, said they were a tiny bit mushy. Even though you cook them and they soften he was still stuck on the fact that they were mushy before they went into the pan. Said cooking them to mush is not the same thing! LOL Next time I will be using fresh cherries too, but I might liquify them in the blender, per his request. I hope you like this recipe, let me know how it turns out! I'm anxious to know, and to report back to the cherry police LOL!

Helene, it was absolutely delicious! Thank you for your recipe! I ran out of balsamic so didn't have quite a 1/2 cup - ended up adding a little wine. I was concerned the fresh cherries might be too firm,as well, but I cooked them a bit longer and they softened up easily.I pressed them with a spoon as they began to soften to break them up a bit, but honestly I liked it with a bit of texture so I don't think I'd blend them - it looks so beautiful plated up!:) The flavor was amazing. I loved how the butter flavor came thru adding just the right richness. Looking forward to making this again, maybe for company next time. :D

yay!! Sheryl I'm so so happy that you had success with this recipe! Isnt it funny how excited we get when our friends approve of our dishes? LOL!! I agree with the blending thing, hubby did not like the texture of the cooked cherries and he used the sauce but pushed aside the fruit. Thats why he wanted to blend them but I am not thrilled with the idea, it will make the whole sauce kind of gloppy, dont you think? I also smooshed them in the saucepan as they cooked to get some of the juices flowing but I think if I just left them alone the flavor would still be the same. Yes, its a pretty dish and I personally would be very impressed to have this served to me at a dinner party, it looks so classy and impressive, but we know it isnt!! LOL Thanks for rating my recipe a 5 Sheryl!!! xoxoxoxo

You're welcome. I love how easy it was to make, as well. It's funny how texture bothers some people and others love it. Most of my family avoids nuts for that reason - so disappointing. :D
