Ingredients
| 1 lb | rotini pasta or gluten free rotini |
| 1 stk | butter/margarine |
| 1 md | onion, yellow |
| 1 clove | garlic |
| 1 md | green cabbage, shredded |
| 2 lg | carrots, grated |
| 1 1/2 tsp | salt |
| 1/2 tsp | pepper |
| 1/2 tsp | crushed red pepper (optional) |

Directions
Bring a pan of water to a boil. Add pasta to boiling water. Cook until slightly undercooked. Drain and set aside.Slice a medium onion.Mince garlic.Quarter and core head of cabbage.Shred cabbage in food processor.Peel and shred carrots.Melt butter on medium in another large pan.Cook onion in melted butter for 5 min.Add minced garlic and cook for 30 sec.Add shredded cabbage and carrots.Stir to combine and cook for about 8-10minSeason cabbage mixture with salt, pepper, and red pepper.Add pasta to cabbage mixture and continue to cook over medium heat while stirring.Cook until pasta is done.

I wish I would have seen this over the summer! Hubs came home with the biggest cabbage in the world (really this thing was like 15 lbs). I ran out of ideas on what to do with it. I fried a lot of it and with some I added apple, it was YUM. I am going to keep this in mind for dinner sometime soon. I think my kids will really like this one. Also love that its GF!
