Ingredients

1/2 green pepper, thinly sliced
1 green onion, sliced
1 salt to taste
1 lb fresh fish filets
1/2 tomato, sliced
1/2 Tbsp basil
1 white pepper
3 slice lemon

We loved this technique! The fish turned out perfectly light and tender, and the added hint of lemon was delicious.

 

Directions

1
Cut tin foil into 12X16 inch rectangle.

Place green pepper, tomato and green onion on lower half of foil sheet.

Sprinkle with 1/4 teaspoon basil, salt and pepper.

Place fish on vegetables.

Sprinkle with remaining basil, salt and pepper.

Top with lemon slices.

Fold upper half of foil over fish and vegetables.

Double fold edges of foil to make a tight 1/2 inch seal.

Place foil envelope on baking sheet and bake at 450 for 15 minutes or until envelope puffs.

To serve, cut an "X" in top of envelope and fold foil back.

Great to see a FISH Recipe Idea, We Love Fish and always looking for something different to do with Fish beside the fried Fish. This sound like a great Idea and will Most Definately giv this one a try. great Idea. Thanks!

What kind of fish do you suggest using and how thick should the fillets be??? My grand parents did something similar with a fillet blue fish when I was a kid up on Cape Cod, but I remember the blue fish being super boney! Please advise as to type of fish ! Thanks so much

Wonderful recipe, fast easy & flavorful. Fish comes out moist and flakey every time. Can be used with any type of fish. I did salmon, trout, cod. Awesome share Brenda, thank you!
