Brenda's Notes:

Rarely do I not have this made and in my refrigerator! When a craving for "something sweet" raises it's ugly head this recipe is a good (and healthy) "fix"!

It is a great side for any type of breakfast and is absolutely delicious with pork or chicken. Serve it hot or cold--either way it is wonderful!

Comments from the Test Kitchen: Kitchen Crew

We chose to use a combination of Granny Smith, Gala & Red Delicious apples for this wonderful recipe. The mix was terrific, with the Granny Smiths being the real stand-outs. Try serving them warm atop flaky biscuits... Mmmmm, good!

Directions

1
Wash the apples, halve, and remove the cores and stems.
2
Chop the apples (do not remove the skin) into large chunks, approximatley 1/2" to 3/4" in size.
3
Place apples, cinnamon, and water in medium size sauce pan and cook on medium low heat for approximately 20 minutes or until fork tender. Do NOT put a lid on the pan as it will make the apples mushy.
4
Remove apples from heat. Gently stir in canned whole berry cranberries.
5
Apples can be served immediately while hot or chilled and served up to two weeks later. (The dish can be reheated as desired.) Enjoy!!

Sounds and looks great. I can't wait to fix it.. I am a diabetic, so when that sweet craving pops up I like to have something to go to instead of a sugary desert. Thanks for posting.

I'm 99.9% sure you know that apples are high in sugar but at least it's natural sugar. And of course, the canned whole berry cranberries have sugar in them too. But, at least it's not as bad as eating processed sugars filled with fat, etc. I found a very interesting article this morning about fats, carbs, and even uses for various apples. Here is a link to Ellie Krieger's blog: blog.elliekrieger.com/; the article is about mid-page down. Happy Eating!! :-)
