These cookies are so easy to make and so melt in your mouth yummy! A client of mine gave me this recipe a couple of years ago and now it's a family favorite!

These toffee pecan cookies are named perfectly. They literally melt in your mouth. Using cake mix is the perfect base for these cookies and makes them come together quickly. Pecan sand toffee complements each other while providing flavor and texture. We used a small cookie scoop, but if you used a bigger one you'd have sworn they were from a bakery. They'll satisfy everyone's sweet tooth and are perfect for any event. Bakers at any level of experience can make these.

Ingredients
- 1/2 cup butter, softened
- 1 box yellow cake mix
- 2 large eggs
- 1 tablespoon water
- 1 package Heath toffee bits
- 1/2 - 1 cups pecans, chopped

Test Kitchen Tips
Instead of a greased baking sheet, we used parchment paper. They are sticky on the bottom from all the Heath bar bits. Parchment paper allows them to come off the sheet easily.

Step 1Preheat oven to 350 F.

Step 2Mix butter. Add cake mix, eggs, and water. Mix well with a hand mixer.

Step 3Add toffee bits and pecans. Mix by hand. If you like lots of nuts, feel free to add 3/4 to 1 cup of pecans.

Step 4Spoon onto an ungreased cookie sheet.

Step 5Bake at 350 F for 10 minutes for small cookies. For larger cookies bake for 12-13 minutes.

Step 6Transfer to cooling rack. They won't look done. But when they cool, they solidify, still being a soft chewy cookie.
