Another wonderful cauliflower casserole from the box; photo from internet very similar to recipe. This one is great for breakfast or lunch too. Although I have not made this yet- my niece and her husband love it.

Ingredients For cauliflower surprise

  • 1/2 md
    head of cauliflower
  • 2 lg
    eggs, hard boiled, peeled and chopped
  • 1 1/2 Tbsp
    flour
  • 1/2 tsp
    curry powder, or less to taste
  • 1/3 c
    cream or 1/2 and 1/2 cream
  • 1 Tbsp
    heaping butter
  • 1/2 tsp
    dried thyme
  • 2/3 c
    grated raclette cheese(like swiss without the holes)
  • 4 slice
    applewood thick sliced bacon, fried crispy and chopped up

How To Make cauliflower surprise

    Boil cauliflower in slated eater about 8 minutes, Drain. Arrange the cauliflower in a buttered or sprayed shallow over proof casserole dish. Scatter the chopped eggs evenly over top. Set aside.

    Put the flour, curry powder, butter and cream in a saucepan. Bring to boil slowly, stirring until thickened and smooth. Stir in thyme, seasoning, and allow sauce to simmer for a few minutes.

    Remove saucepan from the heat, stir in 1/3 of the cheese. Pour the sauce over the cauliflower, and scatter remaining cheese and bacon over top. Brown cheese under broiler until golden brown. Watch carefully as you can see it burns easily.
