honey licious banana nut muffins

I wanted to make something as a dessert & decided to make these delicious Banana Nut Muffins, using some over ripe bananas that I had, & decided to use honey instead of sugar, & EVOO (extra Virgin Olive Oil instead of butter or other oil, this was sort of an experiment to see how they would turn out. They are very moist, light, & very nutty from the nuts in the muffin as well as on top, & not too sweet, just the way my husband prefers. This recipe makes 24 large muffins, but from what has already been eaten, there won't be any to freeze for later. They're excellent. Give them a try. Enjoy

Ingredients For honey licious banana nut muffins

  • 2 c
    all purpose flour, sifted
  • 1/2 tsp
    salt
  • 1 Tbsp
    baking powder
  • 2 tsp
    baking soda
  • 2 lg
    eggs
  • 1 c
    honey
  • 1 c
    extra virgin olive oil
  • 1 Tbsp
    banana flavoring
  • 1 c
    chopped walnuts, (i used black walnuts)
  • 4 lg
    ripe bananas, smashed
  • extra nuts for top of each muffin,optional

How To Make honey licious banana nut muffins

    Preheat oven to 350 degrees F. Line muffin tins with paper liners, and lightly Spray, then set aside till needed. Peel bananas & add to a medium size bowl, then smash into large chunks. Set aside till needed.

    I used honey as the sweetener for these muffins and Extra virgin Olive oil instead of butter or other cooking oil.

    Add the oil to a medium size bowl, then fill cup with honey and pour into bowl, and add the eggs. Beat until blended together and well mixed.

    Now add in the smashed bananas, and mix again. Sift the flour, salt and baking powder, & baking soda together in a small bowl, then pour into bowl with smashed bananas & blend till mixed.

    Add in chopped nuts of your choice and beat again.

    Now add in the Banana flavoring, it added lots of banana flavor & stir to blend into batter.

    Now fill muffin tins 2/3 full, top with additional chopped nuts if desired, and bake in preheated 350 degree F. oven for 25 minutes or until done.

    Remove from oven, allow to cool in muffin tin for 10 minutes then remove to a serving platter.
