My family loves this recipe. I get compliments all the time when I bring this to events. I am not a big fan of cilantro so I use parsley but you can always substitute the cilantro for the parsley. Super fast and super easy to make...Enjoy!

1/2green pepper, chopped

1/2red onion, chopped

3tomatoes, chopped

1 canblack beans, drained

1 cancorn, drained

2 Tbspolive oil, extra virgin

2 Tbsplime juice

2 Tbsplemon juice

2 Tbspparsley

1/4 tspblack pepper

How To Make black bean and corn texas caviar

1Chop the tomatoes, green pepper and onion, place in a medium sized bowl.

2Add corn, beans, olive oil, lemon and lime juice, parsley, salt and pepper. Stir all ingredients until they are mixed.

3Refrigerate for at least 1 hour before serving. Note: this gets better as it sits, so the next day it may taste even better!
