The trick is not to exceed 86 degrees, should you exceed that add chunks of unmelted chocolate to the hot chocolate and keep stirring it into melted, when you exceed 86 you have destroyed the fat crystal structure and it need to be rebuilt , not doing this you end up with chocolate that gets a fat boom and chocolate look dull or has a white haze on it, this is called tempering chocolate
