disappearing caramel corn

It absolutely melts in your mouth! Made with one bag of puffs, it's heavily coated and decadent. I like to make another batch with 2 bags of puffs and mix them.

Ingredients

  • 1 cup butter
  • 2 cups brown sugar, firmly packed
  • 1/2 cup light karo syrup
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1 package corn puffs

How To Make disappearing caramel corn

  • Step 1
    In a heavy saucepan, mix butter, brown sugar and syrup. Bring to a boil and cook 2 minutes.
  • Step 2
    While it cooks, pour the bag (or 2) of corn puffs into a large roasting pan for plenty of room to stir.
  • Step 3
    Add the vanilla and soda. Give it a stir and it will foam up. While it foams, pour it over the corn puffs and mix well to coat the puffs.
  • Step 4
    Spread it out on large cookie sheet(s) and bake at 250 degrees for 1 hour, stirring every 15 min. Store in zip lock bags. Hide a bag to enjoy at your leisure because the others won't last long!!
