It absolutely melts in your mouth! Made with one bag of puffs, it's heavily coated and decadent. I like to make another batch with 2 bags of puffs and mix them.

How to Make Disappearing Caramel Corn

Step-by-Step

  1. In a heavy saucepan, mix butter, brown sugar and syrup. Bring to a boil and cook 2 minutes.
  2. While it cooks, pour the bag (or 2) of corn puffs into a large roasting pan for plenty of room to stir.
  3. Add the vanilla and soda. Give it a stir and it will foam up. While it foams, pour it over the corn puffs and mix well to coat the puffs.
  4. Spread it out on large cookie sheet(s) and bake at 250 degrees for 1 hour, stirring every 15 min. Store in zip lock bags. Hide a bag to enjoy at your leisure because the others won't last long!!
