Disappearing Caramel Corn

It absolutely melts in your mouth! Made with one bag of puffs, it's heavily coated and decadent. I like to make another batch with 2 bags of puffs and mix them.

2 c
brown sugar, firmly packed
1/2 c
light karo syrup
1 tsp
1/2 tsp
baking soda
1 pkg
corn puffs

How to Make Disappearing Caramel Corn


  • 1In a heavy saucepan, mix butter, brown sugar and syrup. Bring to a boil and cook 2 minutes.
  • 2While it cooks, pour the bag (or 2) of corn puffs into a large roasting pan for plenty of room to stir.
  • 3Add the vanilla and soda. Give it a stir and it will foam up. While it foams, pour it over the corn puffs and mix well to coat the puffs.
  • 4Spread it out on large cookie sheet(s) and bake at 250 degrees for 1 hour, stirring every 15 min. Store in zip lock bags. Hide a bag to enjoy at your leisure because the others won't last long!!
