This is from The Cooking Book by the Junior League of Louisville (1979). It's called Peyton's Corn Mousse from Judy Hoge. What I love about it is that it's a microwave recipe. This is my go-to for a quick and easy side dish.

Ingredients

  • 3 tablespoons corn starch
  • 1/4 cup milk
  • 2 cans corn, cream-style
  • 3 - eggs, beaten
  • 1/2 teaspoon salt
  • 1/2 cup sugar

How To Make corn pudding - mw

  • Step 1
    Grease a 1 1/2 quart casserole (I use a 7x11 inch glass dish, but I've used round ones in the past).
  • Step 2
    Stir cornstarch into milk then blend in rest of ingredients. Pour into prepared dish and put dish into microwave.
  • Step 3
    Cook on HIGH 5 minutes, then stir. Cook on HIGH 5 minutes more, then stir. Cook on HIGH 5 minutes more. Let stand 5 minutes before serving.
  • Step 4
    Alternatively, you can bake this in a 375°F preheated oven for 45-60 minutes; stirring every 15 minutes.
