A masala is a way to describe a mixture of spices. A masala can either be a combination of dried (and usually dry roasted) spices, or a paste (such as vindaloo masala) made from a mixture of spices and other ingredients—often garlic, ginger, onions and chilli paste. Masalas are used extensively in Indian cuisine to add spice and flavor.

2 large

canola oil
asafetida (hing)

cumin seeds

mustard seeds

turmeric, ground
green chili, finely chopped
1/2 tsp
kosher salt or to taste

lemon juice, fresh
1 Tbsp
fresh cilantro, chopped

How to Make Aloo Masala (Potato in Indian Spices)


  • 1Boil the potatoes until they are soft and let cool.
    Peel and chop the potatoes in small pieces.
  • 2Heat the oil in a frying pan on medium high. Test the heat by adding one cumin seed to the oil. If it cracks right away, the oil is ready.
  • 3Add the cumin seeds, mustard seeds and asafetida. As the seeds crack, add turmeric, potatoes, green chili, and salt.
    Stir-fry for a few minutes.
  • 4Add lemon juice and cilantro.
    The potatoes should be slightly moist and not dry.
    Serve hot.
  • 5Try adding 2 tablespoons of shredded carrots and 1/8 cup of green peas to potato mixture.
