aioli-style potatoes

Found this on the web site as I was really inspired by Anthony Nicometi's recipe of Neon Lemon Aioli. I wanted to find out about this Aioli sauce and came happily upon this recipe and my mouth started to water and my eyes popped out and so I had to add it to my list of making yesterday, and so I thought I would share it to as well. This is not going to be good for my diet that I'm not really on...but ok, I'll try it. Hope you don't enjoy this either! Ingredients

  • 2 pounds tiny new red potatoes
  • 1/4 cup olive oil
  • 1/4 cup butter, melted
  • 1/3 cup mayonnaise
  • 2 tablespoons fresh garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon chopped fresh basil
  • - salt and pepper, to taste
  • - shredded parmesan cheese, for garnish
  • - parsley, for garnish

How To Make aioli-style potatoes

  • Step 1
    Halve potatoes and set aside. In a large bowl, combine the next seven ingredients (olive oil to salt and pepper). Whisk to combine well. Add potatoes and toss.
  • Step 2
    Place potatoes in a roasting pan, uncovered, and roast at 350º for 35-40 minutes, stirring often, or until potatoes are tender.
  • Step 3
    Garnish potatoes with Parmesan and parsley.
