no drain, stove-top mac n cheese
This Mac n Cheese recipe is so easy. You can use your fav cheese. We like American, cubed. I have also added Pimento Cheese. If you like a less "soupy" cheese sauce use 1/2 to one cup less milk. My Mom always made hers soupy for my Daddy. I mostly use Almond Milk. I have also used Half n Half, Evaporated milk with water or reconstituted powdered milk. I always serve this with Salmon Patties just like my Mom did. I like the "soupy cheese sauce" on my patties. My son likes his cheese thicker so I take some out of the pot for me before adding the second half of the cheese.

Ingredients
- one pound macaroni, elbow
- one teaspoon salt
- water to cover
- 3 tablespoons butter, cold
- 2 cups milk
- 2 cups american cheese
How To Make no drain, stove-top mac n cheese

Step 1Pour macaroni into a 2-3 quart non-stick pot that has a lid.

Step 2Add water just to cover the pasta. Make sure the pasta is under the water by about half an inch.

Step 3Add salt.

Step 4Adjust heat to bring the water to a boil. Stir the pasta occasionally to prevent clumping and scorching.

Step 5When water comes to a boil, reduce heat to medium low and stir in butter. Cover with the lid. Remove lid to stir occasionally. Cook 8 minutes.

Step 6Remove lid completely and add milk and half the cheese. Stir. Turn up heat to medium. Bring milk to boil stirring occasionally.

Step 7When milk starts to boil turn off heat and add the rest of the cheese. Stir till the cheese melts. Serve warm.
