mom's macaroni & cheese casserole

This is one of my mom's favorites although I don't remember it that well.

Ingredients

  • 8 ounces macaroni of choice
  • 1 pound american or cheddar cheese, grated (mom used velveeta)
  • 1/2 - green bell pepper, diced
  • 1 small jar diced pimento, strained
  • 1 can cream of mushroom soup
  • 1 small onion, diced

How To Make mom's macaroni & cheese casserole

  • Step 1
    Preheat oven to 350.
  • Step 2
    Cook macaroni as directed, less 2-3 minutes. When about half done, add pepper and onion. Cook a few more minutes but do not overcook macaroni.
  • Step 3
    Remove from stove. Strain. Add remaining ingredients. Stir well.
  • Step 4
    Put in a greased casserole dish. Bake for 30 minutes, or until cheese is melted and bubbly.
