mom's macaroni & cheese casserole
This is one of my mom's favorites although I don't remember it that well.

Ingredients
- 8 ounces macaroni of choice
- 1 pound american or cheddar cheese, grated (mom used velveeta)
- 1/2 - green bell pepper, diced
- 1 small jar diced pimento, strained
- 1 can cream of mushroom soup
- 1 small onion, diced
How To Make mom's macaroni & cheese casserole

Step 1Preheat oven to 350.

Step 2Cook macaroni as directed, less 2-3 minutes. When about half done, add pepper and onion. Cook a few more minutes but do not overcook macaroni.

Step 3Remove from stove. Strain. Add remaining ingredients. Stir well.

Step 4Put in a greased casserole dish. Bake for 30 minutes, or until cheese is melted and bubbly.
