creamy alfredo sauce

Making this sauce in the blender, was something I found on the internet. As I was preparing the original recipe, I found myself changing things as I went along. More heavy cream, more Parmesan cheese, less garlic, heating on top of the stove, and then thickening the sauce. It turned out awesome! A real winner!

yield Makes enough sauce to go over 1 1/2 to 2 cups of dry noodles.

Ingredients

  • 2 cups heavy cream
  • 1 cup freshly grated parmesan cheese (this makes a difference)
  • 2 cloves garlic, pressed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon butter, softened
  • 1 tablespoon flour

How To Make creamy alfredo sauce

  • Step 1
    Place the first 5 ingredients in a blender. Puree until the mixture thickens.
  • Step 2
    In a separate bowl, mix the flour and butter together, and make a paste. (a raw roux)
  • Step 3
    Place the pureed ingredients in a sauce pan, and start to warm gently, it will thin down quite a bit. Bring to a little simmer.
  • Step 4
    Now to thicken your Alfredo Sauce, add the butter/flour paste. Whisk together, until totally blended. Simmer lightly, until thickened.
  • Step 5
    Serve over your favorite type of pasta!
