I absolutely love dumplings and always make them when I'm having Irish stew or any kind of stew for that matter. My son George loves them too, must have some Irish in him! These dumplings are so easy to make and always turn out "fluffy". (Just don't over cook them!!)

Ingredients

  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon parsley (dried)
  • 1/2 teaspoon salt and pepper
  • 2/3 cup milk (i use low fat, but whatever you have)
  • 2 tablespoons olive oil

How To Make dumplings (easy to make)

  • Step 1
    Combine the first four ingredients.
  • Step 2
    Combine the last two ingredients.
  • Step 3
    Combine both, but don't overmix, do not knead. I always mix it with a fork and as soon as it forms one large ball of dough - stop mixing. Then, with your fingers, pull off a piece of dough, maybe walnut size and drop it on top of the soup. Don't put too many because they will double in size. Cover and simmer for about 10 minutes, remove all of them, they should be eaten right away. Enjoy!!
