Ingredients

  • 1 lb
    short pasta bowties
  • 2-3 Tbsp
    extra-virgin olive oil
  • 1 pt
    cherry or grape tomatoes, halved
  • 1 small
    red onion, diced
  • 1/2
    each yellow and green bell pepper, diced
  • 1/2 c
    black olives, sliced
  • 1 lb
    cooked sala shrimp, thawed
  • 1/4 c
    fresh basil leaves, torn into small pieces
  • 1 c
    prepared refrigerated pesto sauce
  • 1/2 c
    mayonnaise
  • 2 tsp
    fresh lemon juice
  • 1/2 c
    cup grated parmesan cheese

How to Make Pesto Pasta Salad

Step-by-Step

  1. Cook pasta until al dente. Drain and toss in a large bowl with olive oil. Add tomatoes, onion, peppers, olives, shrimp and basil. Set aside while you make the dressing.
    Whisk pesto sauce, mayonnaise, lemon juice and Parmesan together in a bowl. Add to the pasta salad mixture and mix until thoroughly combined. Serve at room temperature or chilled.
