crispy turkey leftovers
I saw a similar recipe and adapted it to our liking. This is a super way to use up some leftovers in a quick, easy and tasty twist on just the re-heat and serve situation. We love how crispy they are and you can serve them plated with a side or even on a toasted bun for a sandwich !

Makes 6 patties
Ingredients
- 1 - 2 cups leftover turkey gravy
- 1/4 cup all purpose flour
- 2 tablespoons cornstarch
- 1 egg - lightly beaten
- 1 tablespoon finely chopped onion
- 1/8 teaspoon each salt and pepper
- 3/4 cup leftover mashed potatoes
- 3/4 cup leftover chopped cooked turkey
- 2 tablespoons cranberry sauce - with whole berries works best
- 3/4 cup leftover stuffing
- 2 tablespoons butter
- 3 tablespoons oil
How To Make crispy turkey leftovers

Step 1Place leftover gravy into saucepan and heat through. Keep warm.

Step 2Whisk the flour and cornstarch together in a small bowl or plate and set aside.

Step 3In a medium bowl, whisk egg, onion, salt and pepper until well blended. Stir in the potatoes, turkey, cranberry sauce and stuffing and mix until well combined.

Step 4In a large skillet, heat butter and oil over medium-high heat. Scoop mixture into 1/4 cup portions and shape into balls. Roll in flour mixture then place into hot skillet and press to flatten slightly.

Step 5Fry on each side until golden brown, crispy and heated through - about 4-5 minutes. Remove from skillet and place onto paper towel to drain. Serve hot drizzled with warm gravy.

Step 6If desired, serve on a toasted bun with some cranberry sauce for a fun hot sandwich !
