This is a combination of several recipes I've found over the years. My family all like it very much and it is easier than doing Reubens, and occasionally you have left overs which are good, also.

Ingredients

  • 8 ounces uncooked egg noodles
  • 1 pound pastrami, thinly sliced
  • 1 can sauerkraut, canned
  • 8 ounces pepperjack cheese, shredded
  • 1 tablespoon margarine or butter, melted
  • 1 cup thousand island dressing
  • 1/2 cup milk
  • 1 tablespoon prepared mustard
  • 2 slices pumpernickel bread

How To Make reuben noodle bake

  • Step 1
    Preheat oven to 350 degrees F. Spray 13x9 inch baking dish with nonstick cooking spray.
  • Step 2
    Cook noodles according to package directions until al dente. Drain.
  • Step 3
    Cut pastrami (or corned beef) into bite-size pieces. Combine noodes, pastrami, sauerkraut and cheese in large bowl. Pour into prepared dish.
  • Step 4
    Combine dressing, milk, and mustard in small bowl. Spoon dressing mixture evenly over noodle mixture.
  • Step 5
    Tear bread into large pieces. Process in food processor or blender until crumbs are formed. Combine bread crumbs and margarine in small bowl; sprinkle evenly over casserole.
  • Step 6
    Bake, uncovered, 25 to 30 minutes, or until heated through.
