~ homestyle sauce & pasta ~
My kids love this chunky tomato sauce...they aren't big on meat sauces, but by all means add meat if you so desire, or meatballs. Make sure you use a good quality canned tomato, such as San Marzano. Enjoy!

How To Make ~ homestyle sauce & pasta ~
-
Step 1In a dutch oven over medium heat, add olive oil. Once hot, toss in onion, 1/4 tsp salt and pepper and cook until golden. Stirring occasionally. Once cooked add garlic stirring for a few more minutes.
-
Step 2Add the paste, stirring and cooking for 4 - 5 minutes.
-
Step 3Stir in the tomatoes and juice, bay leaves, butter, all seasonings except fresh basil. Cover & simmer for about 1 hour, stirring occasionally. Remove bay leaves, taste and adjust seasonings if need be. Before serving stir in fresh basil.
-
Step 4Cook pasta in just salted water. Cook a few minutes less than instructions on box. When draining, save 1/2 cup pasta water. Add pasta water and about 1 cup pasta sauce back into pot pasta was cooked in. Add pasta back to pot and cook over medium heat until water is absorbed. ( this gives the pasta a creamy texture.)
-
Step 5Now ladle desired amount of sauce over pasta and toss. Serve with additional pepper flakes and grated Parmesan cheese. I had enough sauce left for a pound of spaghetti next week. Store remaining sauce, covered in refrigerator. This is a meatless sauce, you can brown some ground beef or sausage and add if desired.
