~ homestyle sauce & pasta ~

My kids love this chunky tomato sauce...they aren't big on meat sauces, but by all means add meat if you so desire, or meatballs. Make sure you use a good quality canned tomato, such as San Marzano. Enjoy!

Ingredients

  • 3 - 1 pounds cans - san marzano tomatoes and juice - squeeze with fingers into pieces in a bowl or if you like a not so chunky sauce you can process the tomatoes smoother in a food processor
  • 3 tablespoons olive oil
  • 1 medium sweet onion, chopped - plus 1/4 tsp kosher salt and pepper
  • 3-4 cloves garlic, minced
  • 3 ounces tomato paste
  • 2 - bay leaves
  • 1 teaspoon each- garlic powder, dried basil, pepper
  • 1 1/2 teaspoons kosher salt
  • 5 tablespoons butter
  • 1 1/2 tablespoons dried parsley flakes
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup sugar...or to taste
  • 1 tablespoon basil paste or fresh chopped basil
  • 1 pound penne pasta

How To Make ~ homestyle sauce & pasta ~

  • Step 1
    In a dutch oven over medium heat, add olive oil. Once hot, toss in onion, 1/4 tsp salt and pepper and cook until golden. Stirring occasionally. Once cooked add garlic stirring for a few more minutes.
  • Step 2
    Add the paste, stirring and cooking for 4 - 5 minutes.
  • Step 3
    Stir in the tomatoes and juice, bay leaves, butter, all seasonings except fresh basil. Cover & simmer for about 1 hour, stirring occasionally. Remove bay leaves, taste and adjust seasonings if need be. Before serving stir in fresh basil.
  • Step 4
    Cook pasta in just salted water. Cook a few minutes less than instructions on box. When draining, save 1/2 cup pasta water. Add pasta water and about 1 cup pasta sauce back into pot pasta was cooked in. Add pasta back to pot and cook over medium heat until water is absorbed. ( this gives the pasta a creamy texture.)
  • Step 5
    Now ladle desired amount of sauce over pasta and toss. Serve with additional pepper flakes and grated Parmesan cheese. I had enough sauce left for a pound of spaghetti next week. Store remaining sauce, covered in refrigerator. This is a meatless sauce, you can brown some ground beef or sausage and add if desired.
