Ingredients For cheesy cauliflower & pea pasta with yolk

12 ozspaghetti

1head cauliflower
-
1 1/2 cchicken or vegetable stock
-
3/4 cfresh grated parmigano- reggiano

1 cfrozen peas
-
4 lgegg yolks
-
salt
How To Make cheesy cauliflower & pea pasta with yolk

1Bring a pot of salted water to a boil. Cook the spaghetti according to package directions. Drain and set aside. Cook the peas in boiling salted water and drain and pour over the spaghetti.

2Cut the cauliflower into florets and cook in boiling salted water until very soft. Place the cauliflower in a food processor.add the stock, and cheese. Process until everything is well incorporated.

3Mix the cauliflower cheese sauce with the spaghetti and peas. Taste and adjust for seasoning

4Place in 4 serving dishes and separate the eggs yolks from the white and top each dish with a raw egg yolk. Break the yolk and stir into the spaghetti to make a creamy sauce
