Ingredients For cheesy cauliflower & pea pasta with yolk

  • 12 oz
    spaghetti
  • 1
    head cauliflower
  • 1 1/2 c
    chicken or vegetable stock
  • 3/4 c
    fresh grated parmigano- reggiano
  • 1 c
    frozen peas
  • 4 lg
    egg yolks
  • salt

How To Make cheesy cauliflower & pea pasta with yolk

    Bring a pot of salted water to a boil. Cook the spaghetti according to package directions. Drain and set aside. Cook the peas in boiling salted water and drain and pour over the spaghetti.

    Cut the cauliflower into florets and cook in boiling salted water until very soft. Place the cauliflower in a food processor.add the stock, and cheese. Process until everything is well incorporated.

    Mix the cauliflower cheese sauce with the spaghetti and peas. Taste and adjust for seasoning

    Place in 4 serving dishes and separate the eggs yolks from the white and top each dish with a raw egg yolk. Break the yolk and stir into the spaghetti to make a creamy sauce
