Smelt are tiny little fish. There use to be a place in the town I grew up in that had a "SMELT FRY" on Friday nights.... This is an old family recipe from the Sullivan side of the family that has been passed down over the generations. This brings back memories! *** You can clean the smelt and freeze them for future use, then just thaw them the night before you want to use them up. *** This is not my photo, but one I got from the internet. ***

Ingredients

  • FISH
  • 2 pounds fresh smelt (clean, remove bladders, wash)
  • COATING # 1
  • 1 teaspoon salt
  • 2 large eggs (beaten)
  • COATING # 2
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon ground black pepper
  • 3 cups fine bread crumbs
  • OIL FOR FRYING
  • 4 - inches of oil

How To Make smelt fry !

  • Step 1
    Clean the fish, remove bladders and wash.
  • Step 2
    Heat oil to 375 degrees.
  • Step 3
    Beat the eggs and set aside until needed.
  • Step 4
    Prepare the bread crumb mixture
  • Step 5
    Fry until golden brown (just a couple of minutes). Remove from oil to paper towel lined platter.
  • Step 6
    *** Serve with potato salad, cole slaw, baked beans, french fries or baked potato. Garnish with lemon wedges and parsley.
