Easy Does It Chicken



I threw this together one night when I wasn't feeling well but I knew my husband was going to come home from work famished because I hadn't made him a lunch. He was very good natured about it and I wanted to make it up to him. My husband complimented me on it and I told him I just "threw it together". He said, "I don't care how you threw it together or from what altitude...it landed right!"

3 Tbsp
oil, bacon grease, olive oil whatever you use
boneless, skinless chicken thighs or breast fillets depending on size and hunger
1/4 c
1/4 c
sliced green onions
3 clove
garlic, smashed and chopped
red bell pepper, sliced and cut into 1/2
1 can(s)
cream of chicken soup
1/2 can(s)
(soup can) water
1/2 can(s)
white wine
salt and pepper to taste
whole fresh zuchini, halved lengthwise and sliced into 1/4
whole yellow squash, halved and sliced into 1/4


1Put your grease or oil in a large frying or saute pan on med/low heat and saute the onions, garlic and red pepper
2While you saute the above ingredients, roll the chicken in flour, salt and pepper and brown in some oil adding oil as you need to.
3While you are browning the chicken add the squash to the other ingredients in the saute pan and continue to saute all the vegetable ingredients together.
4When the chicken is browned, place it on top of the vegetables in the big saute pan.
5Spoon the cream of chicken soup over the chicken, right out of the can.
6Add a half can of water and half can of white wine. Put a lid on the pan or cover with foil and put in the oven on 350 for 40 minutes.
7I served this with a baked red potato but it would be great to serve with mashed or even boiled potatoes and a side of fresh biscuits.
