Ingredients
- MARINADE
- 2 tablespoons soy sauce
- 2 tablespoons rice wine or saki
- 1 teaspoon toasted sesame oil
- 4 whole scallions chopped
- 4 cloves garlic
- 2 inch piece of ginger cut into slices
- CHICKEN
- 6 bone in chicken thighs
- 10 dried black mushrooms steeped in hot water for at least 20 minutes. drain
- BRAISING SAUCE
- 1 1/2 cups chicken stock
- 3 tablespoons oyster sauce
- 3 tablespoons rice wine or saki
- 1 tablespoon rock sugar
- 1 teaspoon cornstarch mixed with 1 tbsp water
How To Make braised chicken thighs in oyster sauce

Step 1Mix the marinade ingredients together and add the chicken. Rub the marinade over the chicken and let marinate for at least 60 minutes.

Step 2Transfer the chicken to a Dutch oven or clay pot. Arrange the mushrooms around the chicken.

Step 3Mix the ingredients together for the braising liquid except the cornstarch and water.. Pour over the chicken. Bring to a boil

Step 4Reduce the heat and partially cover the chicken and cook for 45 minutes. Rmove the chicken to a plate. Stir in the cornstarch and water and cook until thickened.

Step 5Serve the chicken with the sauce accompanied by rice and bet.
