lone star chicken-fried steak
There are many variations of chicken-fried steak, but they are all breaded, tenderized steak, fried and served with cream gravy. From Best of the Best From Texas.

Ingredients
- 1 1/2 pounds round steak, tenderized (i like to use cube steaks)
- 1 cup flour
- 1 teaspoon salt
- - pepper, to taste
- 2 - eggs, slightly beaten
- 1/2 cup milk
- - oil, for frying
- GRAVY:
- 6 tablespoons bacon grease or pan drippings
- 6 tablespoons flour
- 3 cups hot milk
- - salt and pepper, to taste
How To Make lone star chicken-fried steak

Step 1Trim steak and cut into 5 pieces.

Step 2Combine flour, salt and pepper.

Step 3Dredge all steak pieces in flour mixture until lightly coated.

Step 4Combine eggs and milk.

Step 5Dip steak into egg mixture and dredge again in flour.

Step 6Heat 1/2 inch of oil in a heavy skillet.

Step 7Place steaks in skillet and fry until golden brown on both sides.

Step 8To make gravy, remove steaks to warm oven, retaining 6 tablespoons of drippings (or use bacon drippings).

Step 9Add flour.

Step 10Cook and stir until flour begins to brown.

Step 11Add hot milk and stir until thickened.

Step 12Season with salt and pepper to taste and pour over warm steaks.
