Taco Meatloaf

this is a recipe that I came up with and it came out really good and wanted to share it with everyone

I like to top this meatloaf with shredded cheese, salsa, sour cream, diced onions and tomatoes and it tastes just like a taco, my boyfriend really enjoyed this recipe

  • 1 lb
    ground beef
  • 1
  • 1/4 c
    crushed saltine crackers
  • 1/4 c
    chunky mild salsa (any brand)
  • 1 pkg
    mild taco seasoning (any brand)
  • 1/4 c
    chopped onion (dried chopped onions will work also)
  • 1 tsp
    black pepper

How to Make Taco Meatloaf


  1. pre-heat oven to 350. crumble up hamburger meat into a bowl and add the taco seasoning, pepper and onions and mix with hands or wooden spoon until well combined.
  2. crush up the saltine crackers in a small ziplock bag with rolling pin until crushed into tiny crumbs like the consistency of bread crumbs. then add the egg and the salsa and mix until well combined. add the crush saltine crackers and mix well
  3. put the meat into an 8x9 inch brownie pan and form into a meatloaf and cook for 1 hour straining off the grease every so often. when the meatloaf cools down, cut into slices and top with what ever you like
  4. ***suggestions for toppings***

    you can use cheese, salsa, diced tomatoes, sour cream, or black olives for toppings you can also use avocados or any other type of toppings you would like

    if you would like to make a larger meatloaf double all ingredients
