Ingredients
- FOR THE HOLLANDAISE SAUCE
- 3/4 cup butter
- 1 tablespoon each soy sauce and worcestershire sauc
- 2 egg yolks
- 1 tablespoon each sherry vinegar and water
- 1 teaspoon lemon zest
- FOR THE STEAK
- 4 new york strip steaks
- 2 tablespoons oil
How To Make new york strip steak with steak sauce hollandaise

Step 1To make the sauce In a small saucepan melt the butter with out stirring. Skim off the milky solids. Set aside and keep warm

Step 2In a small bowl stir together the soy sauce and Worcestershire sauce and set aside.

Step 3Place the egg yolks, water and vinegar in a metal bowl. Set the bowl over a pan with boiling water. Do not let the bowl touch the water. Whisk constantly until thickened scraping sides of bowl. Remove from heat. and continue to whisk slowly adding the butter. If it starts to break or look curdly stop adding butter and keep whisking until its smooth again. Then mix in the soy sauce mixture and lemon zest.

Step 4use immediately

Step 5For the steaks Add oil to pan. Season the steaks with salt and pepper and sear until desired doneness. Serve with sauce over top.
