Ingredients
- 1 pound ground beef
- 1 pound navy beans, soaked overnight and drained/rinsed
- 1 large chopped onion
- 5 - buds garlic, mashed
- 1 large bell pepper, chopped, any color will do
- 1 cup chopped celery
- 1 can tomato paste
- - salt to taste
How To Make navy beans ala mimi

Step 1Soak beans overnight; drain; rinse; place in large pot (like a dutch oven) and cover with water about an inch higher than the beans.

Step 2Using kitchen gloves, break up ground beef into the water in the pot. Add all other ingredients and bring to boil on top of stove. Reduce to simmer and cook, covered, for about 2 hours, stirring about every 30 minutes. Add water if it begins to look like it's not moist enough. We like these not soupy, but also with a nice amount of liquid in them.
